To balance out these types of days, I am starting to take short breaks while I am trying to get something done. I am participating the Vegan MoFo this year, and I can't be more pumped!Instead of posting a new recipe every day in September, I decided I'll also share one of my previous recipes or a favorite recipes by other bloggers I admire. I'm treating Vegan MoFo as a round-up, so I will be answering the prompts with new recipes once or twice a week. I made this decision so that I can prioritize my schoolwork and college essays (this is a rough time to be a high school senior!), but also still be an active blogger and Vegan MoFo participant.

I was fortunate enough to be contacted by Vegan Cuts - the super cool online marketplace - again! After my five-and-a-half-week summer program, I got home to see this snack box waiting for me in my kitchen. It's obvious that a lot of people think vegans only eat vegetables. Yeah, most of what we eat is plant-based. Yeah, most people who identify as vegan also happen to be focused on eating healthy foods. But that doesn't mean we don't get enough to eat.
DIY To-Go Pack
If you know me, you'll know that sustainaibilty is something that I'm always working towards. I will do anything, from raising hens to composting or bringing tupperware to restaurants, to conserve the amount of waste I produce. Recently, I have been interested in Zero Waste lifestyle. That has brought me to realize just how much of the stuff I use is disposable. I create so much more trash than I would create in the totally eco-friendly life I imagine for myself.
Why I Adore Cacao Nibs
Cacao nibs's crunch and slightly bitter chocolate flavor makes them taste amazing on:

Packing Plant-Based Lunches
As I get back into the routine of school, I realize again how important it is for me to prepare my school lunches the night before. I often don't have the time, energy or motivation to pack a decent lunch when I wake up in the morning. My school doesn't have a cafeteria, but there is a little store at school where I could buy some expensive food that I don't really want. It's so much easier to prepare a good lunch at night when I'm not pressed for time - that way I get to eat exactly what I want.

WHOOHOO! Okay, sorry - I just had to get that out of my system. You see, I can't even remember the last time I was as excited as I was when I first saw that this Snack Box was coming to my house. Luckily for my impatient self, Vegan Cuts provided me with an estimated date for arrival and a helpful link to the USPS tracking for the box.
Benefits of Chia Seeds
We all know that chia seeds are great. I mean, they're fun to grow into plants, fun to drink, and popular in many vegan recipes, like smoothies, puddings and power bars.
I first found out about chia seeds as a great source of slow-release hydration for runners. When we add a tablespoon of chia seeds to a water bottle, the seeds absorb the water.
I'm Felicity, a college student who thinks about cooking vegan foods way more often than I actually cook.
