As a toddler, my grandpa was definitely one of my best friends. Papa, as I called him, used to take me on little trips to a nearby Waffle House all the time. In my earliest memories, I remember always ordering cheesy eggs and cinnamon toast with apple butter. While I am no longer a fan of cheese or eggs anymore, I do still love cinnamon toast and apple butter because they remind me of spending time with my grandpa. My interest in apple butter has lead me to taste and make a bunch of different types.
This chunky recipe of mine has become one of my favorites - it is sweet and creamy while also chewy and thick. It is made from only 3 ingredients, all of which are known for having high fiber contents. Keep this recipe in mind (or in the fridge!) for the next time you are having toast and you're looking for a tasty and wholesome topping.
Chunky Apple Butter
(makes 1 cup)

- 1/4 cup flax seeds
- 10-15 dates, soaked in water for 10 minutes
- 1 medium-sized apple
- In a food processor or blender, grind the flax seeds into a powder.
- Remove the skin from the apples and chop them into little cubes. Then chop the soaked dates into little pieces as well.
- In a bowl, stir together the flax powder, the apples and the dates. Put the mixture in the food processor or blender and blend until it is as smooth as you'd like.
