Honestly, I have no idea why I even call this recipe ice cream. It has no dairy or milk of any kind, no scary preservatives or emulsifiers, and definitely nothing you can't pronounce. It's full of fruit sugars, healthy fats, protein and carbs. It probably makes a better breakfast than most commercial cereals.

I often top mine with chia seeds and cacao nibs - two of my favorite super foods. Suddenly, this healthy treat just got a whole lot better.

Vegan Peanut Butter Banana Ice Cream
(makes 1 small serving, easily multiplied)

Ingredients:
- 2 ripe bananas, sliced and frozen
- 2 tablespoons of peanut butter
- optional toppings: chia seeds, cacao nibs, etc.
Directions:
- Let the frozen banana slices thaw for about 15 minutes before you're ready to use them. (You might want to try pouring about 1 tablespoon of hot water on the slices.)
- In a tough blender, combine the banana slices and the peanut butter. Blend them together until they reach a a desired consistency. Add some toppings, if you'd like. Enjoy!
