Are you ready for summer yet? I certainly am. This berry sorbet recipe was the perfect snack I needed to remind me that summer is not too far off . . .
I know it's not technically summer yet, but it certainly feels like it where I live! Between the 90˚F daily weather and the impending final exams, I am sure that summer is already here. I love summer because of the obvious reasons: the warmth, the plants, the ocean, the free time and the lack of homework, etc. But to me, there is no good summer day for me without fresh berries!
I love my local farmers' market, and the farmers there always have great deals on blueberries and strawberries. I also grow my own strawberries (the blueberries have yet to bloom this year). Once my refrigerator and kitchen counter become overridden with berries, I like to make sorbets as a delicious way for me to eat berries and stay cool.

What is your favorite way to get in a summery mood? I love frozen fruit snack- or really just combining frozen fruits in yummy slushies, smoothies or ice "creams." That's why I wanted to share my new sorbet recipe this week.
Bananas make a great base for any frozen, fruity snack. Adding a sweet berry tang to the banana base in this recipe makes a deep fruity flavor that I can't get enough of.
Raw & Vegan Berry Sorbet

Ingredients:
- 1/2 cup of fresh or frozen blueberries
- 3-4 fresh or frozen strawberries, cut up into small chunks
- 2 tablespoons of cane sugar
- 1/4 cup of water
- 2 frozen bananas
Directions:
- Combine the blueberries, strawberries, and water in a small pot and turn on the heat. Stir sporadically.
- After the water starts boiling, add in the sugar. From now on, stir continuously.
- About 3 minutes after adding in the sugar, remove the warmed berry mixture from the stovetop to let it cool. (As you can see in the image above, I poured my berry mixture in a measuring cup that I submerged in a bowl of ice water to speed up the cooling process.)
- Once the warmed berry mixture has cooled down a bit, blend it (preferably with the "pulse" setting) for a minute or two to break up the softened berries.
- Let this mixture cool by sitting on a counter or in a fridge for an hour or two.
- Now, take the frozen bananas and put them in a blender along with the cooled berry mixture. Blend it all together.
- Serve chilled and enjoy!
